The bacteria in our kefir evolved in acid.

What’s the difference between Kefir and Kombucha?
We are often asked what is the difference between Kefir and Kombucha…
Yogi Nectar water kefir is produced by the microbial activity of kefir ‘grains’ (live starter cultures), which have a symbiosis containing over 60 species of lactic and acetic acid bacteria. Some yeast, raw sugar and water is added and the resultant fermentation yields billions of Lactobacillus strains (known to live comfortably within the gastric acid and intestinal juices of the human gut).
Kombucha on the other hand, is made from either a green or black tea base. Added to that is sugar, which has been fermented with a type of “tea fungus” called a symbiotic culture of acetic acid (vinegar) and yeast, or SCOBY, for one to two weeks. Generally Kombucha will not contain Lactobacillus strains. It generally contains caffeine as a byproduct of the tea used.

The secret of Yogi Nectar lies in the unique water kefir used to carefully ferment each batch.
Kefir was first discovered by the highland monks of ancient Tibet who used it daily. Knowing the kefir to be health-giving, the monks nurtured it lovingly and would gift it to visitors from far and wide.
The kefir was clouded in mystery for thousands of years until, in 1907, a Russian scientist, Elie Metchnikoff, discovered that kefir restored and added beneficial bacteria to the human gut microbiome creating health and longevity to its users.
The special nature of the kefir is now known to be due to its probiotic content.
While this modern discovery confirmed the wisdom and intuition of the Tibetan monks, thankfully, it’s no longer necessary to travel to Tibet to enjoy its powerful benefits.
